1.适用范围:本标准适用于由CNS 3055[生乳]制成之全脂(即溶)乳粉、脱脂(即溶)乳粉、食用调制乳粉、食用乳清粉、食用全脂羊乳粉等产品之一般要求。1.Scope: this standard is general rules that applied to whole (instant) milk powder, skimmed(instant) milk powder, edible modified milk powder, edible whey powder and edible goat milk powders, etc made from CNS 3055 (crude milk).
2.1 全脂乳粉:系由生乳除去水分所制成之粉末状产品,其品质应符合CNS 2342[乳粉]之规定。2.1 whole milk powder: it refers to powder product dehydrated from crude milk, its quality should in line with the prescription of CNS 2342 (milk powder).
2.2 即溶全脂乳粉:系由生乳除去水分,并经适当加工处理,实质改进其分散性及复水性之粉末状产品,其品质应符合CNS 2342 之规定。2.2 instant whole milk powder: it refers to the powder product coming from crude milk which is dehydrated, properly treated and whose dispersibility and rehydration is substantially improved. Its quality should be in line with the prescription of CNS 2342.
2.5 食用调制乳粉:系以生乳、鲜乳、乳粉或乳清粉等为主要原料,添加其他营养与风味成分植物油、糊精、蔗糖、葡萄糖等醣糖类,再添加各种必要食品添加物予以调合而成之粉末状产品,得添加其他成分来调整养分与风味,其品质应符合CNS 2509[食用调制乳粉]之规定。2.5 edible modified milk powder: it refers to the powder product that takes crude milk, fresh milk, milk powder and whey powder, etc as the major materials, adding other nourishment and flavor compositions like vegetable oil, dextrin, cane sugar and glucose, and other necessary food additives. Its quality should be in line with the prescription of CNS 2509 (edible modified milk powder).
2.6 食用乳清粉:系由新鲜乳清经脱水处理,不添加任何防腐剂之粉末状产品,可添加维生素与矿物质,其品质应符合CNS 7524 [食用乳清粉]之规定。2.6 edible whey powder: it refers to the powder product made from fresh whey, which is dehydrated and no antiseptic is added to. It may contain vitamin and mineral matters and its quality should be in line with the prescription of CNS 7524 (edible whey powder).
2.7 食用全脂羊乳粉:系由生羊乳除去水分所制成之粉末状产品,可添加维生素与矿物质,其品质应符合CNS 11509[全脂羊乳粉]。2.7 edible goat milk powder: it refers to the powder product made from dehydrated goat milk. It may contain added vitamin and mineral matters. Its quality should be in line with the prescription of CNS 11509 (goat milk powder).
3.一般要求3.General requirements:
3.1 乳粉类制品必须符合政府相关法令之规定。3.1 milk powder product must be in line with the regulations issued by the government.
3.2 工厂、制造加工设备与制造过程必须符合[食品工厂建筑及设备设厂标准]及[食品良好卫生规范]之规定。3.2 factory, manufacture equipment and manufacture procedure should be in line with prescriptions of (standard for architecture , equipment and establishment of food factory) and (sanitation instructions for food).
3.3 乳粉类产品必须由未含防腐剂、碱、中和剂或其他化学品,且于液态时已杀菌处理(浓缩前,以72℃加热15秒或具同等效果之杀菌方法处理)之新鲜鲜乳制造。3.3 milk powder product must be made from fresh milk, contain no antiseptic, base, neutralizer or other chemicals and be sterilized in the form of liquid (before concentration, heated to 72℃ for 15minutes or treated by other sterilization method with the same effect).
3.4 乳粉类制品之成分必须具合理之均一性,色泽必须为白色、乳白色或添加调味之巧克力、水果之色泽,但不得有因加热过度而致之棕或黄色,亦不得有任何其他不正常之颜色,并不得有多量棕色斑点存在。3.4 milk powder product’s compositions must be rationally even, and the color must be white, ivory white, or chocolate or fruit color depending on what is added. There should not be yellow or brown due to overheating, or any other abnormal color. There should not be many brown spot as well.

3.5 乳粉类制品再干燥或复水(reliquefication)状况下均具固有之风味、无其他异臭、异味。3.5 under the condition of re-dehydration or reliquefication, milk powder product be of original flavor, no foreign or abnormal odor.
3.6 乳粉类制品之容器包装必须于正常情况下搬动、运输与贮存时,能保持内容物品质及卫生。3.6 container of milk powder product must keep the content qualified and clean, under the condition of normal movement, transport and storage.
3.7 乳粉类制品不得含有不合卫生之外来物质。3.7 milk powder product should not contain any foreign body that doesn’t accord with sanitation standard.
3.8 特别要求:政府规定或交易时由买卖双方议定需要磷酶试验时,其结果以每mL复原制品(reconstituted product)不超过4痢酚(phenol)为准。3.8 special requirements: if phosphatase test is required by the government or both bargainers, the result of the test should be no more than 4 phenol per ml reconstituted product.
4.加热处理分类:本分类并非品质分级所需,但可作为喷雾法制造之脱脂乳粉是否适用于各种不同用途之指标。4.Heat treatment classification: it is not for the classification of  quality, however, it can be the index to test whether skimmed milk powder through spray method can be applied to different purpose. 乳清蛋白态氮(whey protein nitrogen)试验为下列加热分类之基础。 whey protein nitrogen test is the basis of the following heat treatment classification.

5.不适用食用乳粉类制品(unfit for human consumption):任何脱脂乳粉、全乳粉或酪乳粉之品质不能符合国家标准之规定者,视为不列级产品。5. unfit for human consumption: any skimmed, whole or butter milk powder that can’t meet the requirements of the national regulations, is regarded as no-grade product. 任何乳粉类制品,其风味、气味或其他特性指标显示有分解、中和情况或不符合第3节一般要求时,必须列为[不适食用]。any milk product whose flavor, odor or other characteristic shows the sign of disintegration or neutralization or which isn’t in line with the general requirements in the third section, must be taken as (unfit for eating). 直接供消费者食用之乳粉,共包装上应标示有效日期及保存期限,其保存期限,袋装者为24个月以内,罐装者36个月以内,超过有效期限规定者,不得供食用或食品加工原料用。milk powder for direct eating, should label out valid time and on-shelf period. The on-shelf period for milk powder in bags is within 24 months, while the time is 36 months for powder in cans. Product, which has passed its valid time, should not be used as manufacture material or edible matter.
